INGREDIENTS:
· 3 boneless pork loin chops
· sea salt and black pepper to taste
· 1 tsp garlic powder
· 1 Tbsp olive oil
· ½ cup / 119 g roasted red peppers
· 1 cup / 225 g mozzarella cheese, shredded
DIRECTIONS:
1. Preheat the oven to 325 degrees F / 163 degrees C.
2. Sprinkle pork chops on both sides with salt, pepper, and garlic powder.
3. Into a skillet over medium-high heat, pour olive oil. Add pork chops and cook on each side to get a golden crust -- for 3 to 5 minutes. Remove from heat.
4. Add red peppers and cheese evenly to each pork chop. Bake in oven-safe skillet for 10 minutes or until thoroughly cooked.
