INGREDIENTS:
· 1/3 cup / 88 mL butter
· 1½ lbs / 710 mL ground beef
· 3 Tbsp / 27 mL Tex-Mex seasoning
· 1 cup / 240 mL tomatoes, crushed
· salt and pepper to taste
· ¼ cup / 82 mL pickled jalapenos
· 1/3 cup / 475 mL cheddar cheese, shredded
DIRECTIONS:
1. Preheat the oven to 375 degrees F / 190 degrees C.
2. In a pan, fry the ground beef in butter on medium heat. Add Tex-Mex seasoning.
3. Stir and let mixture come to a simmer. Allow beef to be cooked through till no longer pink. Add crushed tomatoes. Add salt and pepper to taste.
4. Remove from heat and place in a greased baking dish. Top with jalapenos and cheese.
5. Bake for 15 to 20 minutes or until golden brown.
6. Serve with desired toppings or as-is.
